Spaghetti with tomatoes and olives

This is a super quick, 15 minute pasta dish that any cook – experienced or not can whip up!  And that’s a promise.  If you want to see a video of it being made be sure to check out my reel on Instagram.  You’ll find it there.

INGREDIENTS

  • 1 zucchini – finely grated
  • 5 cloves garlic
  • 1/4 cup of pitted kalamata olives
  • 1/2 cup of cherry tomatoes
  • 1 handful of fresh basil
  • 1/4 cup semi dried tomatoes
  • 2 tablespoons cold pressed olive oil
  • 1 teaspoon salt
  • 1 fresh Birdseye chili

METHOD

  1. Crush garlic and saute in large skillet with olive oil until starting to brown.
  2. Add grated zucchini and cook for about 4 minutes or until it wilts down.
  3. Add cherry tomatoes (cut in half), olives, semi-dried tomatoes, salt, fresh basil and chili and let cook for another 5 minutes.
  4. And another tablespoon of olive oil and let cook another 2 – 4 minutes.
  5. Boil spaghetti until al dente then strain and mix through sauce in the skillet.
