This is a super quick, 15 minute pasta dish that any cook – experienced or not can whip up! And that’s a promise. If you want to see a video of it being made be sure to check out my reel on Instagram. You’ll find it there.
1 zucchini – finely grated
5 cloves garlic
1/4 cup of pitted kalamata olives
1/2 cup of cherry tomatoes
1 handful of fresh basil
1/4 cup semi dried tomatoes
2 tablespoons cold pressed olive oil
1 teaspoon salt
1 fresh Birdseye chili
Crush garlic and saute in large skillet with olive oil until starting to brown.
Add grated zucchini and cook for about 4 minutes or until it wilts down.
Add cherry tomatoes (cut in half), olives, semi-dried tomatoes, salt, fresh basil and chili and let cook for another 5 minutes.
And another tablespoon of olive oil and let cook another 2 – 4 minutes.
Boil spaghetti until al dente then strain and mix through sauce in the skillet.
