Fluffy Banana Pancake

Do you remember as a kid, there was something special about weekend breakfasts? With all the time in the world and no rushing off to school or work. For our family, Saturday mornings were always a quiet home affair and with all the time in the world, of course the best thing to do with all that time was make pancakes.

It’s only natural that this tradition has been passed down to my kids. Most weekends they ask for pancakes and I’m delighted to have come up with a healthy pancake recipes. The best part is it’s so easy to whip up, even the kids can do them on their own now (well most of it).

  • 1/2 cup plant based milk
  • 1 tablespoon maple syrup
  • 1 1/2 cups plain wholemeal flour

  1. Mix together the banana, egg, milk and maple syrup until you get a creamy mixture.
  2. Add the flour and baking powder and mix until well combined.
  3. Heat up a fry pan with some vegan butter or coconut oil.
  4. Pour small amounts of the mixture into the pan to form small round pancakes (size it totally up to you).

Frequently Asked Questions

Can you share the inspiration behind your healthy banana pancake recipe, and what makes it a favorite for your family?

The inspiration for my healthy banana pancake recipe comes from the nostalgia of weekend breakfasts as a child. Saturday mornings were a special time when we had the luxury of a leisurely breakfast. I wanted to pass down this tradition to my own family, and these pancakes have become a favorite because they are not only delicious but also healthier. They are quick and easy to make, and my kids even enjoy making them themselves.

What are the key ingredients that make these pancakes healthy, and how do they contribute to the overall taste and texture?

The key healthy ingredients in these pancakes include ripe banana, plant-based milk, wholemeal flour, and maple syrup. Ripe bananas provide natural sweetness and moisture, reducing the need for added sugar and making the pancakes tender. Wholemeal flour adds fiber and nutrients while giving the pancakes a wholesome texture. Plant-based milk keeps the recipe dairy-free. Maple syrup adds a touch of natural sweetness without refined sugars.

Could you provide an alternative to the egg in this recipe for those who prefer a vegan option?

Certainly! You can omit the egg and add an extra ripe banana to make this recipe entirely vegan. The extra banana will help bind the batter and maintain the pancake's moisture.

What is the significance of using wholemeal flour in these pancakes, and could one use other types of flour as substitutes?

Wholemeal flour is used in these pancakes for its added fiber and nutrients compared to refined white flour. It contributes to a heartier texture and nuttier flavour. However, you can use other flours as substitutes, such as whole wheat flour or all-purpose flour if you prefer a different texture or taste.

How would you recommend serving these banana pancakes, and do you have any favorite toppings or accompaniments?

These banana pancakes are versatile and can be served with a variety of toppings or accompaniments. You can serve them with fresh fruits, a drizzle of maple syrup or honey, a dollop of yogurt or whipped cream, or even a homemade fruit sauce like raspberry coulis, as I did in the blog.

What tips do you have for achieving the perfect pancake texture and appearance when cooking them in the pan?

To achieve the perfect pancake texture and appearance, make sure your pan is well-heated and lightly greased with vegan butter or coconut oil. Pour the pancake batter in small rounds to your desired size. Wait for the batter to form air bubbles on the surface, signaling that it's time to flip the pancake. Cook until both sides are golden brown.
