Nut Crunch Muesli Bar

Ingredients

  • 5 medjool dates
  • 2 cups oats (to make GF you could use Quinoa flakes)
  • 3 tablespoons almond butter
  • 1/2 cup hemp seeds
  • 1/4 cup roasted hazelnuts
  • 1/4 cup raw almonds
  • 3 tablespoons coconut oil
  • 1 flax egg (1 tablespoon flax meal and 3 tablespoons water)
  • 1/4 cup dried blueberries
  • 1/4 cup dark chocolate chips

Method

  • Pit dates and melt coconut oil.
  • Place all ingredients into a food processer (except for dried blueberries and chocolate chips) and blend until a wet mixture is formed that comes together.  If it’s too dry continue blending until more fat is released from the nuts.
  • Pour mixture into a bowl and mix in by hand the blueberries and chocolate chips.
  • Pat down the mixture evenly into a slice tray, lined with baking powder.
  • Bake for 10 – 12 minutes at 180 degrees.
  • Once cooled cut into muesli bars or bit size snacks.

Recipe Notes

Option to add a layer of melted on top of the slice as pictured here.

Frequently Asked Questions

What makes these muesli bars a "Nut Crunch" version?

These muesli bars are named "Nut Crunch" because they contain both roasted hazelnuts and raw almonds, which provide a delightful nutty crunch in every bite.

Can I use almond butter substitutes like peanut butter or sunflower seed butter?

Yes, you can use different nut or seed butter substitutes based on your preference or dietary restrictions. Peanut butter or sunflower seed butter can work well as alternatives to almond butter.

Is there an alternative to flax eggs if I don't have flax meal on hand?

Yes, you can use chia seeds as a replacement for flax seeds. Simply mix 1 tablespoon of chia seeds with 3 tablespoons of water, let it sit for a few minutes to thicken, and use it as you would a flax egg.

Can I adjust the level of sweetness in these muesli bars?

Absolutely! You have control over the sweetness of these bars. You can add more or less sweeteners like dates or chocolate chips to suit your taste preferences.

Can I customize the ingredients further to make these muesli bars even more unique?

Certainly! Feel free to get creative with your add-ins. You can replace dried blueberries with other dried fruits like cranberries or apricots, and you can experiment with different types of chocolate chips, such as white chocolate or dark chocolate with different cocoa percentages, to make these bars uniquely your own.
