Chop the spring onions into small pieces.

Blend the mushrooms until they have a mince-like texture.

  • 400 grams potatoes
  • 300 grams sweet potato
  • 1 red onion
  • 300 grams zucchini (1 large)
  • 240 grams baby carrots
  • 250 grams English spinach
  • 1 tablespoon olive oil
  • 1/4 cup toasted pine nuts
  • Green goodness sauce
  • 220 grams baby spinach
  • 100 grams fresh coriander
  • 100 grams fresh parsley
  • 1 avocado
  • 1 teaspoon salt
  • Juice of one lemon
  • 1 clove garlic
  • 3 tablespoons cold pressed olive oil
  • 1 tablespoon maple syrup

Method

Green Goodness Sauce

  • Place all ingredients in a high-speed blender or food processor and blend until you create a smooth green magical sauce.

Salad

  • Peel potatoes and cut into large chunky pieces.
  • Cut red onion into thick slices.
  • Cut zucchini into wedge-like slices.
  • Prepare two baking trays lined with baking paper. On one tray place potatoes and drizzle with olive oil and salt and bake for 30 – 40 minutes or until golden brown. After 20 minutes, roast onion and carrots on separate trays.
  • Gently grill zucchini in frypan or skillet.
  • To prepare the salad toss the spinach with a tablespoon of olive oil. Place the spinach on the bottom of a flat round or square large dish.
  • Top the spinach with the roasted vegetables. Then place generous dollops of the green goodness sauce over the vegetables and roasted pinenuts.
